葡糖澱粉酶 (Amyloglucosidase)(AMG) 能夠從非還原端末端水解 α(1→4) 和 α(1→6) 糖苷鍵，並將 α-澱粉酶(α-amylase)分解所產生的低聚物(例如:麥芽糊精)轉化為葡萄糖
此酵素來自於黑麴菌(Aspergillus niger)
根據葡糖澱粉酶之特性，可應用於測量澱粉和膳食纖維之實驗
